Pork Stir-Fry
Ingredients:
- 1 pork tenderloin (150g), sliced into thin strips
- 1 bell pepper, sliced
- 1 cup snap peas
- 1 cup broccoli florets
- 2 tbsp soy sauce (low sodium)
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp olive oil

Prepare the Ingredients:
Slice the pork tenderloin into thin strips and slice the bell pepper. Wash and cut the snap peas and broccoli if needed.
Cook the Pork:
Heat olive oil in a large pan or wok over medium-high heat. Add the pork strips and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the pan and set aside.
Cook the Vegetables:
In the same pan, add a bit more olive oil if necessary. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant. Add bell pepper, snap peas, and broccoli. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
Combine and Season:
Return the pork to the pan. Add the soy sauce and stir everything together. Cook for another 2 minutes to heat through and combine flavours.
