Chicken and Quinoa Bowl
Ingredients:
- 1 chicken breast (150g)
- 1/2 cup quinoa, uncooked
- 2 cups spinach
- 1/2 cup cherry tomatoes, halved
- 2 tbsp feta cheese, crumbled
- 1 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste

Cook the Quinoa:
Rinse the quinoa under cold water. Cook it according to the package instructions, usually involving a 1:2 ratio of quinoa to water. Bring to a boil, then simmer for about 15 minutes until the water is absorbed.
Grill or Bake the Chicken:
Season the chicken breast with salt and pepper. Grill on medium-high heat for about 6-7 minutes on each side or bake at 375°F (190°C) for 20-25 minutes until fully cooked. Let it rest before slicing.
Prepare the Bowl:
In a bowl, combine the cooked quinoa, fresh spinach, and cherry tomatoes.
Add the Chicken and Cheese:
Slice the cooked chicken breast and add it on top of the quinoa mixture. Sprinkle the crumbled feta cheese over the bowl.
Dress the Bowl:
